Strawberry Citrus Salad: In-Season, Nutritious Recipes
Strawberries are one of the quintessential summer foods – and lucky for us, this “berry” special fruit is just the right amount of sweet, balanced with heart-healthy nutrients like Vitamin C, manganese, and antioxidants. Strawberries make a delicious snack all on their own, but they’re also a vibrant and tasty sidekick for fresh greens, like this yummy salad recipe from our friends at Shape Up North. Packed with several servings of vegetables and fruits – plus protein, healthy fats, and fiber – this healthy, summery salad is the berries!
Ingredients
1-2 handfuls of salad greens
½ - 1 cup sliced strawberries
½ - 1 cup orange or tangerine slices
1-2 tablespoons shelled pistachios
1-2 tablespoons dried cranberries
1/8 - ¼ cup feta cheese
Your favorite vinaigrette
Directions
Wash and slice strawberries and set aside. Place salad greens in a bowl. Peel citrus and break apart into slices, removing any seeds. Arrange citrus and strawberry slices over the salad greens. Top with the pistachios, dried cranberries, and feta cheese. Drizzle your vinaigrette evenly over your salad and… enjoy!
