Asian Chicken Pasta Salad

This Asian Chicken Pasta Salad is the perfect nutritious meal or side for when you want a filling recipe packed with flavor.
Ingredients
Pasta
- 1 box bow tie pasta (or pasta/noodle of choice), cooked al dente
- 4 chicken breasts cooked and shredded, or the breast meat of one rotisserie chicken, shredded
- ¼ cup finely diced green onions
- ½ pack sliced almonds – toasted
- 1 bag spinach (stems removed), or other deep greens
- 1 small bag of pea pods
- 1 can of mandarin oranges (drained)
Dressing
- 1/2 cup sesame seeds (toasted)
- 2/3 cup soy sauce
- 2/3 cup red wine vinegar
- 1/2 cup olive oil
- 4 tablespoons sesame oil (optional)
- 4 tablespoons sugar
- 1 teaspoon salt and pepper
Preparation
Make the dressing. Marinate the cooked chicken and cooked pasta in half of the dressing in the fridge overnight.
Toss all ingredients together with the remaining half of the dressing. Serve immediately.
