Apple Carrot Salad: Fresh Fruit Recipes
Body
When it comes to this harvest salad medley, carrots and apples may just pair as well together as peanut butter and jelly – but with far more nutrients and a satisfying crunch. A creamy base holds them together, all deliciously garnished dried cranberries (opt for lower-sugar versions if you’re monitoring your glucose levels) or raisins for a surprisingly flavorful snack or side dish.
Ingredients
- 1 cup shredded carrots
- 3 medium apples, washed, cored and diced with skins on
- 1 tbsp. lemon juice
- ½ cup raisins or dried cranberries (optional – or use lower-sugar versions to reduce sugar)
- ⅛ cup extra virgin olive oil (EVOO) mayonnaise or plain Greek yogurt.
Directions
Combine all ingredients. Chill thoroughly. Serve on salad greens for an additional boost of nutrients.
